Most Asian cooks parboil the shoots before adding them to a recipe. I parboil moso shoots. Many shoots I slice and cook without parboiling.
Taste the shoot before cooking. If it has a burning aftertaste, drop it into boiling water for a few minutes. Take it out and then stir fry it.

Since my supply of shoots varies, I prefer to box and mail the shoots, and then, bill you for them afterwards. I don’t want you to prepay for shoots that do not shoot!
Fresh bamboo shoots are available March and April. There may be a few in early May and late February. Early Bamboo (P. praecox) shoots in March. Moso begins in early April. Mid-season varieties begin in April and finish in April. Sometimes Japanese timber is available in early May.
I dig bamboo shoots on Mondays and Wednesdays and ship them via USPS Priority Mail the same day. You receive the shoots on Thursdays and Saturdays. I dip the butts in lemon juice to reduce browning of the exposed ends.
I will ship one or several of the following Phyllostachys species: praecox (Early Bamboo), edulis (Moso Bamboo, Mao Chu), dulcis (Sweetshoot or vegetable Bamboo), nigra henon (Ha chiku), Vivax, Vivax aureocaulis (Yellow skin vivax), Viridis Robert Young and Houzeau, nidularia (Big Node Bamboo), aurea (Golden, Fishpole bamboo), Shanghai #3, Parvifolia, bambusoides (Japanese Timber).
